A little banana paradise...

I had some left-over bananas and wanted to make something other than the standard banana bread. I came up with these.


Chocolate Banana Little Cupcakes topped with Fresh Banana Buttercream.

I will admit. They were yummy. So yummy that immediately after tasting one and giving one to each one of my children, I delivered every remaining cake to my neighbors. Not because I am generous, mind you, but because I have NO WILL POWER. None at all.

Baking for fun, is so much fun!

Anyone out there reading this know my mom? If you do, you know she is fabulous! Most of my fondest memories from my childhood involve cooking with my mom. Warm cozy meals at dinnertime, sugar cookies at Christmas, and cupcakes in an icecream cone. I was thinking about these Cupcake Cones the other day and I thought about how fun it would be to bake those with my daughter. We decided on Mint Chocolate Chip (since we both adore that flavor icecream). First we wrapped the cone bases in foil and filled them with chocolate batter.


Then we baked them...


Then came the best part. The mint buttercream frosting. I am not generally a frosting fan, but I added a little extra cream to this and it litterally tasted like mint-flavored soft-serve icecream. mmm...


Valentine Sweetness...

You'll never guess what my daughter took to school for her valentine treats...


Strawberry Dipped Marshmallow Pops. We wrapped them up like lollipops and tied on a valentine that she made all by herself. So fun! And I promise not to post any more pictures of dipped marshmallows. This week anyway. Vive l'amour!

New obsession.

In case you haven't noticed already, I have a new obsession. Dipped marshmallows. I don't even like marshmallows. Yet... I. Am. Obsessed. Here are some more little cupcakes. And I do have to admit, though I don't like marshmallows, I have eaten one (or two, or three, or four) of these chocolate dipped. Because unfortunately, for me, chocolate pretty much trumps everything else. I would probably eat cardboard, if it was dipped in chocolate...

Valentine Cupcake



So, I got inspired by my favorite cupcake blog, and decided on a different cupcake for the Sweets for Your Sweetie boxes. These are neapolitan little cupcakes - a layer of chocolate cake, a layer of vanilla cake, topped with fresh strawberry frosting and a milk chocolate dipped mini marshmallow. Your sweetie will love these (mine did anyway:)
